One evening on the Chicago Riverwalk, the night before everything changed.
This photo of the NBC Tower was taken near Adams Street, steps from my hotel. I was in the city for field and user research, embedded with Chefs and General Managers across Compass Digital’s units to understand how they actually run their operations, from opening to close.
The goal: five sites in three days. We pushed to arrive early, before the chaos of service, and stayed through lunch so we could sit with them afterward, watching how they closed their day, their week, their month. Even then, it wasn’t enough time.
What struck me most wasn’t the workflow. It was the weight these Chefs carry with quiet pride. They’re not just running a unit. They’re shaping moments in people’s days. Every dish is a small act of care, flavor as a form of connection.
On day three, I got COVID. Couldn’t reach the remaining sites. Spent the rest of the trip in my hotel room, two blocks from this tower.

Care instructions
– If the poster does gather any dust, you may wipe it off gently with a clean, dry cloth. To remove spots or smudges from acrylic or glass, we recommend applying glass cleaner to a clean, soft, dry cloth or paper towel and then to the surface so that the cleaner does not settle on the frame, then buff the surface dry to remove any streaks.
